Ingredients for 2:
- 100 g arugula
- 4 slices bresaola
- 100 g cherry tomatoes
- 2 spoonful of ground pistachios
- Balsamic vinegar
- Olive oil
- Salt and pepper
Wash the arugula and tomatoes well. Now season with salt, pepper, Balsamic vinegar and olive oil. Set aside.
Prepare the pistachio sauce by mixing the pistachios with some Balsamic vinegar and oil.
Now prepare bresaola rolls. To do so, put some pistachio sauce and arugula leaves on the bresaola slices and roll them.
You can serve the salad in Martini glasses with the bresaola rolls as decoration. Enjoy!
